Its ingenious design allos food to cook faster and in a more even manner, creating a tastier meal. The holes punched down either side of the tray and the tongues on the front and the back allow the ehat from the element on the bottom to maximize natural convection.
When hung on the top rail in the oven the baking tray doesnt act like a frying pan, enabling more even cooking top and bottom. It also allows enough room for the two racks to be placed a the bottom of the oven.
